Cold pressing is the oldest technique used to extract the liquid phase from a material generally composed of solid and liquid phases, and can also be described as filtration under pressure. The basis of this technique is the extraction of oil from the seed under pressure. From a production technique perspective, after the oilseed raw material is cleaned of foreign matter, the pressing process takes place in presses without being exposed to high temperatures. Afterwards, a simple filtration process is performed, and the oils are made ready for sale. Oils obtained by cold pressing stand out in terms of nutritional value because they are not subjected to high-temperature heat treatment during the process (40–50 °C), no solvents are used during the extraction of oil from the raw material, and they contain higher levels of natural antioxidants, phosphatides, cerebrosides, carotenoids, and phytosterols, which are partially removed from the oil during the refining stages in conventional oil production.
